But lately, I’ve been craving something different—something that feels sophisticated, takes almost zero effort, and actually fuels your body for a day in the sun.

Enter the Garlic and Herb Sardine Pâté.

If you are a fan of the current tinned-fish renaissance, this one is for you. By combining nutrient-dense sardines with bright citrus, pungent fresh garlic, and clean herbs, you get a spread that is incredibly high in anti-inflammatory omega-3s and clean protein, but tastes like it came straight from a Mediterranean beach club.

Poolside Garlic and Herb Sardine Pâté

What You Need

  • 2 tins Sardines in lemon and olive oil (do not discard the oil!)

  • 2 cloves Fresh garlic, minced

  • 1/4 cup Italian flat-leaf parsley, finely chopped

  • 2 tsp Dijon mustard

  • 1 Fresh lemon, juiced

  • To taste: Sea salt and freshly cracked black pepper

  • For serving: Thick slices of grilled sourdough bread

How to Make It

  1. Mash the Base: In a small bowl, combine the two tins of sardines along with a generous drizzle of the seasoned lemon oil from the tins. Use a fork to mash the fish down into a rustic, texturized paste.

  2. Add the Aromatics: Stir in the minced fresh garlic, finely chopped Italian parsley, Dijon mustard, and the juice of a whole fresh lemon.

  3. Season and Whip: Whip the mixture together vigorously with your fork until everything is well incorporated. Taste it, then season generously with sea salt and black pepper.

  4. Prep the Bread: Drizzle your sourdough slices with a bit of olive oil and hit them on the grill (or a hot skillet) until they are beautifully charred and crispy.

  5. Assemble and Enjoy: Slather a thick, generous layer of the pâté over the warm sourdough and serve.

While you can absolutely eat this immediately, it actually gets better with a little time. Mix up the pâté before you head out, pack it into a sealed jar, and throw it right into the cooler next to your drinks.
