Why Dandelion Greens Are a Nutrient-Dense Superfood

Dandelion greens may look like a simple leafy green, but they are one of the most nutrient-dense greens you can add to your plate. Just 1 cup of raw dandelion greens contains about 25 calories, 1.5 grams of protein, and nearly 2 grams of fiber, making them a low-calorie, high-nutrition option for salads, sautés, and bowls.  

They are especially rich in:

  • Vitamin K – supports bone health and healthy blood clotting
  • Vitamin A – supports skin, eye, and immune health
  • Vitamin C – helps with collagen production and antioxidant support
  • Calcium + Iron – supports bone strength and oxygen transport  

One of their standout features is their natural bitter compounds, which may help stimulate digestion and bile flow, making them a beautiful addition to meals when you want digestive support.  


Easy Sautéed Dandelion Greens Recipe

This is the easiest way to soften the bitterness while keeping all the nutritional benefits.

Ingredients

  • 1 bunch dandelion greens, washed and chopped
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • Juice of ½ lemon
  • Sea salt + black pepper
  • Optional: red pepper flakes or shaved parmesan

Instructions

Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds. Add the dandelion greens and cook for 2–3 minutes until wilted. Finish with lemon juice, salt, and pepper.

Serve alongside grilled protein, folded into eggs, or over sourdough toast.
